At the heart of Dubai’s culinary scene, Bombay Borough invites diners on a vibrant journey with its new ‘Beyond the Jar’ campaign—a tribute to India’s age-old fermentation techniques reimagined for today’s global palate. Running from September 20th to October 20th, this immersive dining experience is an ode to the transformative power of fermentation, offering a fresh take on time-honored recipes while blending in modern international elements.

Fermentation, long revered in Indian kitchens, has been reinterpreted through a series of artisanal dishes that showcase the technique’s rich heritage and flavor diversity. Highlights include kefir, a North Caucasus fermented milk drink; mit mirsang, a fiery Mangalorean chilli paste; and kanji, a nutrient-packed carrot drink from the Indus Valley Civilization. Each ferment is paired with globally-inspired ingredients, creating dishes that are both rooted in tradition and forward-looking in innovation.

Expect to savor creations like Grilled Scallop Hooman—perfectly spiced and tangy with kefir and amsul, or indulge in the Truffle & Burrata Sourdough Naan—a sophisticated twist on the classic Indian bread, topped with creamy burrata and earthy truffles. Guests can also explore Mit Mirsang King Kish, a modern take on spiced fish with tomato oil and Idiyappams, or the Arugula Kanji Vada, blending traditional vada with sundried tomatoes and cashew cheese for a unique fusion of flavors.
