This June, Hakkasan Dubai, the celebrated Michelin-starred restaurant at Atlantis, The Palm, invites guests to embark on an exquisite culinary journey. Executive Chef Andy Toh has crafted a special Cantonese Journey menu, available exclusively this month, celebrating the richness of seasonal and sustainable ingredients. Priced at AED 488 per person, this menu is a testament to Hakkasan’s commitment to combining traditional Cantonese cuisine with contemporary flair.
Renowned for its fusion of traditional techniques and modern presentations, Hakkasan Dubai’s new menu offers a tantalizing array of dishes that highlight the freshest ingredients. The journey begins with a double-boil chrysanthemum chicken soup, featuring locally sourced chicken from Al Ain farm. This is followed by a roasted sesame chicken roll with fresh mangoes in season from India, and poached Shanghai dumplings filled with locally sourced crab meat and prawn.
The mains showcase the best of sustainable seafood and local produce. Guests can savor an MSC certified grilled Chilean seabass with a traditional Cantonese king soy glaze, a wok-sear locally sourced tiger prawn with Chef Andy’s special XO sauce, and a stir-fry lamb loin with seasonal white asparagus, heirloom carrots, and a spicy garlic sauce. Complementing these dishes are stewed pak choi and mushroom enoki, and a fried trio of organic wild rice. The culinary journey concludes with a delightful dessert featuring Yunnan tea and seasonal Japanese peach.
In line with Sustainable Gastronomy Day on 18th June, this menu emphasizes the importance of sustainable practices in the culinary world. Chef Andy Toh, who has been with Tao Group Hospitality for 13 years and recently became the Corporate Chef of Hakkasan, showcases his dedication to using the finest ingredients and traditional techniques to create modern, flavorful dishes.
The Cantonese Journey menu is available from Saturday, 1st June to Sunday, 30th June, from 6:00pm to 11:00pm. Hakkasan Dubai will temporarily close for the month of July, reopening on Thursday, 1st August, with provisional reservations starting from Wednesday, 31st July.
