On September 25, RAW Coffee Company and MILKLAB opened the RAW x MILKLAB Barista Training Centre at RAW’s roastery and café in Al Quoz, creating a dedicated space that pairs RAW’s specialty coffee expertise with MILKLAB’s barista-grade plant milks. The centre aims to help baristas master steaming, texturing and beverage consistency to meet rising plant-based demand.
Consumer tastes are shifting, and cafés are seeing stronger demand for well-made plant-based drinks. RAW’s leadership framed the centre as an industry response, moving training beyond theory to practical standards for both dairy and alternative milks. MILKLAB and JAR Premium Foods bring product-level insight, so baristas learn techniques that work with specific plant milks rather than guessing. That alignment between product, technique and education is intended to reduce service inconsistencies and raise the quality of every cup.
Courses are hands on and built with practising baristas and industry pros. Core modules include:
- Milk science for plant based milks, understanding behaviour by type.
- Steaming, texturing and latte art techniques across almond, oat, coconut and macadamia.
- Grinder adjustment, extraction parameters and beverage building for consistency.
- Menu development, quality control and front of house workflows.
